Having had a JVM for a number of years and rescently got a JVMJS I would not hesitate a second to go for the YJM.
The original JVM has a number of flaws which I to some extent managed to solve by
a number of mods, but the JS version is a different animal, it is what the JVM should have been...

Before you trade the JVM you really should check the bias (often set very cold from Marshall) and try the negative feedback mod (very simple to perform).
If you like the OD from the 410 better, theres also a mod to convert the 210 OD to the 410 OD.
I have the 410 and experienced the same...
I don't use any OD/Distortion pedal with my Marshall, but I use the ZW44 with my Blackstar HT-5 at home and that amp likes the ZW44.
Distortion at 0, Overdrive at 10 and Tone to taste.
But then again...different amps react very different to different pedals...
Of course it differs from amp to amp, depending on what margins and tolerances the designers used for a particular amp, but I wouldn't worry.

Yepp, all Marshall cabs labeled JCM900 has the G12-T75.
The JCM800:s has a variety of different Celestions, for example
G12-65, G12-M70, G12-T75, but no V30:s.
So like HeHasTheJazzHands says, you need to find a AV (angled)
or BV (straight) if you want a Marshall cab with V30:s.

As long as you dont have a multi effect or something similar that needs to be managed along with the amp itself, the FCB1010 won't do anything the original footswitch can't do.
Beware of the label markings!
I have seen ALOT of older Marshall cabs with the wrong labels.
I have an JCM800 cab labeled 260W...with four G12-T75:s, all original.
I also have a JCM800 cab labeled 280W...with four G12-65:s, all original.

I have used the JVM controller live since I bought the amp
I use it in preset mode and use tape and and a marker, it's been working so good that I've never got around to program my midi board for the JVM.
But on the other hand I have a simple setup with only a few pedals in the loop.
As already stated, start with a really rugged tube in V3.
If I put "the wrong" tubes in the V3 position in my JVM410 it
fries them in a matter of minutes or even seconds.

Either you had two lemons, tube problems, user errror or you guys must play seriously LOUD.

One thing to consider when chosing between the 4 or 2 channel versions is that the OD channel on the 2 channel versions is closer to OD2 on the 4 channel version.

When it comes to Maiden, it's gonna be alot of rack stuff envolved if you want to copy their setup exactly, lot's of JMP-1:s and 9200.
But I'd say you will get close enough with any DSL, TSL, JVM and probably a few other Marshall heads.

Aside from the power, there is a bigger difference between the two...
The voicing of the OD channel on the 205 is more or less the same as the "modern voiced" OD2 on the 410.
Alot of people like the "more traditional" voiced OD1 on the 410 and you miss out on that one if you go with the 205.
